4-pack Vertical Cabernet Sauvignon

Four Bottles of Steinbeck wines that have been cellar-aged in ideal conditions. Limited quantities of all wines, showing an example of four years in vertical: 2016, 2017, 2018, 2019 for a great price. 

Winemaker Notes: 

2016 Cabernet Sauvignon - The longest aged of the four, the wine does indeed show a "bouquet" quality on the nose, with time in the glass a savory/soy sauce component becomes apparent. An excellent vintage, the wine was picked at an earlier ripeness, with olive expression on both the nose and the palate. The Tannins are soft and persist in a playful and light finish.

2017 Cabernet Sauvignon - A fascinating nose of raw brown sugar and black tea leaf, the palate shows both ultra fine and ageable tannins with some blockier structure. The finish is more abrupt than the rest, but the nose and palate are intensely finessed. 

2018 Cabernet Sauvignon - Both bright and dense in aromatic expression, there is an amicable presence of both fruit and spice. The tannins are pleasantly chalky and fine, with an adage towards ageing for another seven years in order to fully tame them. If it were me, however, I would just have a slice of salami and enjoy it now. A wonderful wine, especially on the finish, with a big hit of delicious tart cherry.

2019 Cabernet Sauvignon - This is the ripest style of Paso Cab in the lineup, showing more complexity in the nose of licorice and dill. Full and expressive, well structured with being dark.... and broody. Great fruit and spice presence, it would benefit from aging, and especially from decanting off of its unfiltered sediment. An incredible experience and excellent wine to share with friends and family.
